Skillet Ravioli with Creamy Tomato Sauce

Ingredients
- 1 tablespoon Olive Oil
- 1 white onion, medium, diced
- 3 cloves garlic, minced
- 2 cups tomato sauce
- 1 cup vegetable broth
- 1-pound cheese ravioli
- ½ cup heavy cream
- Salt and pepper to taste
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
Preparation
- Preheat oven to broil.
- In a large skillet, heat up the olive oil. Sauté diced onion over medium heat until softened. Add the garlic and sauté for another minute.
- Add tomato sauce and vegetable broth to the skillet, bring to a simmer.
- Add the ravioli to the skillet, stir and cover the pan with lid. Let simmer on low heat for about 10 minutes or until tender, stir occasionally.
- Pour in the heavy cream and stir to combine with the tomato sauce. Season with salt and pepper.
- Add the fresh spinach to the skillet and stir until wilted.
- Sprinkle the grated Parmesan cheese over the top of the ravioli mixture in the skillet.
- Transfer the skillet to the oven and broil until the cheese is melted and bubbly, about 3-5 minutes.
- Serve hot and enjoy!
