Skillet Ravioli with Creamy Tomato Sauce

Ingredients

 

  • 1 tablespoon Olive Oil
  • 1 white onion, medium, diced
  • 3 cloves garlic, minced
  • 2 cups tomato sauce
  • 1 cup vegetable broth
  • 1-pound cheese ravioli
  • ½ cup heavy cream
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
Preparation
 
  • Preheat oven to broil.
  • In a large skillet, heat up the olive oil. Sauté diced onion over medium heat until softened. Add the garlic and sauté for another minute.
  • Add tomato sauce and vegetable broth to the skillet, bring to a simmer.
  • Add the ravioli to the skillet, stir and cover the pan with lid. Let simmer on low heat for about 10 minutes or until tender, stir occasionally.  
  • Pour in the heavy cream and stir to combine with the tomato sauce. Season with salt and pepper.
  • Add the fresh spinach to the skillet and stir until wilted.
  • Sprinkle the grated Parmesan cheese over the top of the ravioli mixture in the skillet.
  • Transfer the skillet to the oven and broil until the cheese is melted and bubbly, about 3-5 minutes.
  • Serve hot and enjoy!
