Ingredients
- 3 cups leftover rice
- 1/2 cup sun dried tomatoes, chopped
- 3 cloves garlic, minced
- 1/2 cup hot chicken or vegetable broth
- 1/4 cup white wine or additional broth
- 1 cup freshly grated Parmesan cheese (approx.)
- 1/3 cup 35% whipping cream
- 1/4 cup each chopped green onion and fresh basil (approx.)
- 1 tbsp butter
Preparation
- Spread rice, sun-dried tomatoes and garlic in the ActiFry pan. Drizzle with broth and wine (if using).
- Cook for 8 minutes. [For Genius models, use Mode 1.]
- Stir in Parmesan, cream, green onion, basil and butter. Cook for 3 to 4 additional minutes.
- Transfer to a serving bowl and garnish with extra cheese and herbs (if preferred).
Variations
- No leftover rice on hand? One family-sized pouch (454 g) or two smaller (250 g) pouches of ready-to-heat rice are a pantry friendly substitution.
