Ingredients
- 1 onion, diced
- 1/2 each red and yellow pepper, diced
- 1/2 cup frozen corn (optional)
- 2 tbsp taco seasoning blend (prepared or homemade)
- 1 tbsp vegetable oil
- 3 cups cooked brown rice
- 1 can (390 mL) black beans, drained and rinsed
- Optional garnishes such as salsa, sour cream, guacamole, shredded Cheddar cheese, crumbled tortilla chips, chopped green onion and cilantro
Preparation
- Toss onion with peppers, corn (if using), taco seasoning and oil in a bowl. Spread evenly in the ActiFry pan.
- Cook for 8 minutes. [For Genius models, use Mode 1.]
- Add the rice and beans to the pan. Cook for an additional 6 minutes or until fully heated through.
- Spoon the mixture into individual bowls. Serve with bowls of garnishes to add to taste (if using).
Tips
- For a homemade taco seasoning blend: Combine 1 tbsp each chili powder and ground cumin and 1 tsp each salt, garlic powder and onion powder.
- Meat eaters can add leftover cooked ground or cubed meat along with the beans.
- Any leftover cooked or packaged ready-to-heat rice can be used instead of the brown rice.
