Ingredients and Method
Ingredients
- 120 g dark cooking chocolate
- 120 g salted butter
- 3 eggs
- 100 g brown caster sugar
- 1 teaspoon vanilla extract
- 110 g pastry flour
- 1 tablespoon cocoa powder
- 50 g chopped walnuts
- 50 g chocolate chips
- 20 g walnuts
- 4 scoops of Madagascan vanilla ice cream
- Caramel sauce
Method
- Preheat your oven to 190C.
- Line a 24 cm baking dish with greaseproof paper. You can also grease it with butter or cooking spray.
- Prepare the brownie batter. Place the chocolate and butter pieces in a bowl.
- Prepare a bain marie. Put some water in a saucepan and bring to the boil. Place the bowl in the saucepan with the heat off. When the chocolate and butter start to melt, stir regularly until the chocolate is completely melted and smooth. Place the eggs, vanilla extract and sugar in a separate bowl. Whisk for 2 minutes until smooth.
- Add the chocolate/butter mixture and whisk for 1 minute. This will give the brownie a cracked top.
- Fold in the flour and cocoa powder with a spatula until the last bits of flour are incorporated into the batter.
- Add the walnut pieces and mix gently. Spread the batter evenly in the pan and sprinkle with the walnuts and chocolate chips.
- Place in the oven and remove the Ingenio handle. Bake for 14 minutes.
- Remove from the oven and leave to rest for 15 minutes to finish cooking.
- Serve with vanilla ice cream and caramel sauce.
