The "Lucky" Slow-Cooked Guinness Stew

Ingredients and Method
Ingredients
- 1.5 lbs Beef chuck or stewing beef (cubed)
- 2 tbsp Flour (seasoned with salt, pepper, and paprika)
- 1 Large onion, diced
- 3 Large carrots, cut into thick chunks
- 2 Celery stalks, sliced
- 3 Medium potatoes, peeled and quartered
- 1 can (440ml) Guinness Draught (Stout)
- 1 cup Beef stock
- 2 tbsp Tomato paste
- 2 Cloves garlic, minced
- 1 Bay leaf & 1 tsp Thyme
Method
- The Sauté (Flavour Base)Select the Sauté program. Add a splash of oil and the seasoned beef cubes. Let the auto-stirring paddle brown the meat for about 8 minutes. In the last 2 minutes, add the onions and garlic so they soften without burning.
- Pour in half of the Guinness while still on the Sauté setting. Use the provided spatula to scrape any browned bits off the ceramic bowl that’s where the "gold" (flavour) is!
- Add the carrots, celery, potatoes, tomato paste, herbs, beef stock, and the rest of the Guinness.
- Program: Select the Slow Cook mode. Time: Set for 4 to 6 hours (depending on how tender you want the beef). The Paddle: Keep the auto-stirring paddle in! It will gently move the ingredients to ensure the heat is distributed perfectly through the 360° air flow.
- If the stew finishes before you’re ready to eat, the ActiFry will automatically keep it at the ideal serving temperature. Serve and enjoy!
