Ingredients and Method

Ingredients

  • 2 salmon fillets
  • 1 cup panko breadcrumbs
  • 2 tbsp grated parmesan
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper
  • 2 tbsp mayo or Dijon mustard
  • Olive oil spray
  • 1 bunch asparagus, trimmed
  • 1 lb baby potatoes
  • 2 cloves garlic, minced
  • 1/4 cup grated parmesan
  • Optional: parmesan + parsley for topping

Method

  1. Prep the Potatoes Boil baby potatoes until fork tender, about 12–15 minutes. Drain and let cool slightly. Smash each potato gently with the bottom of a glass.
  2. Season with olive oil, salt, pepper, and garlic powder.
  3. Prep the Salmon Mix panko, parmesan, garlic powder, paprika, salt, and pepper together.
  4. Spread a thin layer of mayo or Dijon on top of each salmon fillet, then press the panko mixture firmly onto the top.
  5. Prep the Asparagus Toss asparagus with olive oil, garlic, parmesan, salt, and pepper.
  6. Batch Cook Place potatoes on one side of the air fryer tray, salmon in the center, and asparagus on the remaining side.
  7. Lightly spray everything with oil.
  8. Air fry at 400°F for 18–20 minutes
  9. Serve Finish with flaky salt, lemon wedges, parsley, or extra parmesan.
