Ingredients and Method
Ingredients
- 2 salmon fillets
- 1 cup panko breadcrumbs
- 2 tbsp grated parmesan
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & pepper
- 2 tbsp mayo or Dijon mustard
- Olive oil spray
- 1 bunch asparagus, trimmed
- 1 lb baby potatoes
- 2 cloves garlic, minced
- 1/4 cup grated parmesan
- Optional: parmesan + parsley for topping
Method
- Prep the Potatoes Boil baby potatoes until fork tender, about 12–15 minutes. Drain and let cool slightly. Smash each potato gently with the bottom of a glass.
- Season with olive oil, salt, pepper, and garlic powder.
- Prep the Salmon Mix panko, parmesan, garlic powder, paprika, salt, and pepper together.
- Spread a thin layer of mayo or Dijon on top of each salmon fillet, then press the panko mixture firmly onto the top.
- Prep the Asparagus Toss asparagus with olive oil, garlic, parmesan, salt, and pepper.
- Batch Cook Place potatoes on one side of the air fryer tray, salmon in the center, and asparagus on the remaining side.
- Lightly spray everything with oil.
- Air fry at 400°F for 18–20 minutes
- Serve Finish with flaky salt, lemon wedges, parsley, or extra parmesan.
