Sichuan Spiced Lamb Rack Chops with Air-Fried Artichoke Hearts

Ingredients and Method
Ingredients
- 6 lamb rack chops (about 1-inch thick)
- 1 tsp Sichuan peppercorns, toasted and ground
- 1 tbsp soy sauce
- 1 tbsp honey
- 2 garlic cloves, minced
- ½ tsp Chinese five-spice powder
- 1 cup canned or frozen artichoke hearts, drained and patted dry
- ½ cup panko breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 egg, beaten
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- Lemon wedges (for serving)
Method
- Marinate the Lamb Chops: In a bowl, mix soy sauce, honey, minced garlic, five-spice powder, and ground Sichuan peppercorns. Coat the lamb chops in the marinade and let them sit for at least 15 minutes (or up to 2 hours for deeper flavour).
- Cook the Lamb Chops in the Air Fryer: Preheat the air fryer to 375°F (190°C) for 3-5 minutes. Place the marinated lamb chops in the basket in a single layer. Air fry for 10-12 minutes, flipping halfway through, until caramelized and slightly crispy. ■ Medium-Rare: 10 minutes ■ Medium: 12 minutes
- Air Fry the Artichoke Hearts: Toss artichoke hearts with olive oil, salt, pepper, and garlic powder. Spread them in a single layer in the air fryer basket. Air fry at 375°F (190°C) for 10-12 minutes, shaking halfway through, until crispy and golden brown.
- Serve & Enjoy: Let the lamb chops rest for 3 minutes before serving. Plate with crispy artichoke hearts and enjoy your Sichuan-spiced feast!
- For the Artichoke Hearts, Prepare the Breading in a small bowl, mix panko breadcrumbs, Parmesan cheese, salt, black pepper, and garlic powder. In another bowl, beat the egg.
- Bread the Artichoke Hearts:Dip each artichoke heart into the egg, then coat it evenly with the breadcrumb mixture
- Cook in the Air Fryer: Preheat the air fryer to 380°F (193°C) for 3-5 minutes. Arrange the breaded artichoke hearts in a single layer in the basket. Air fry for 8-10 minutes, shaking the basket halfway through, until golden brown and crispy.
