Air Fryer Ribeye with Chimichurri

Ingredients and Method
Ingredients
- 2 ribeye steaks (about 10-12 oz each)
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh oregano, finely chopped
- ¼ cup fresh parsley, finely chopped
- 2 tbsp fresh chives, finely chopped
- 2 garlic cloves, minced
- ½ tsp red chili flakes (or 1 small fresh chili, finely chopped)
- Juice of 2 limes
- 2 tbsp red wine vinegar
- ¼ cup extra virgin olive oil
Method
- Make the Chimichurri:In a small bowl, combine oregano, parsley, chives, garlic, and chili flakes. - Stir in lime juice, red wine vinegar, and olive oil - Mix well and let sit for at least 10 minutes to allow flavours to meld.
- Prepare the Ribeye:Pat the ribeye steaks dry with a paper towel then season both sides evenly with salt and black pepper.
- Cook in Air Fryer:Place the ribeye steaks in the basket in a single layer.Air fry for 8-10 minutes, flipping halfway through (for medium-rare). Adjusttime for preferred doneness: ■ Rare: 6-7 minutes ■ Medium-Rare: 8-10 minutes ■ Medium: 10-12 minutes ■ Medium-Well: 12-14 minutes
- Rest the Steak:Remove the ribeye from the air fryer and let it rest for 3 minutes to retain juices.
- Slice and Serve:Slice the ribeye against the grain and serve with a generous spoonful of chimichurri on top
