Ingredients
- Dough
- 270 grams all-purpose flour
- 37 grams sugar
- 7 grams active dry yeast
- 1/2 teaspoon salt
- 177 grams warm water
- 42 grams unsalted butter, softened
- 1 egg yolk
- Filling
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1/4 teaspoon flaky salt
- 2 teaspoons ground cinnamon
- 1/4 cup unsalted butter, softened
- 1/2 cup chopped pecans
- Topping
- 1/2 cup icing sugar (powdered sugar)
- 2 tablespoons maple syrup
- 1 tablespoon heavy cream
- Flaky salt, for sprinkling
Method
- 1. Prepare the Dough: In a large bowl, combine the flour, sugar, yeast, and salt. In a separate bowl, mix the warm water, softened butter, and egg yolk. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. Knead the dough on a lightly floured surface for about 8-10 minutes, until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- 2. Prepare the Filling: While the dough rises, combine the butter, brown sugar, maple syrup, flaky salt, and cinnamon in a small bowl. Grease a 22cm round baking dish with butter.
- 3. Assemble the Rolls: Once the dough has risen, punch it down and roll it out on a floured surface into a 12x18 inch rectangle. Spread the butter mixture evenly over the dough. Sprinkle the chopped pecans on top. Starting from the long side, tightly roll up the dough into a log. Cut the log into 6 equal pieces and place them cut-side up in the prepared baking dish. Cover the rolls with a damp cloth and let them rise for about 30-45 minutes, or until doubled in size.
- 4. Preheat the oven to 350°F (175°C).
- 5. Bake the Rolls: Bake the rolls for 25-30 minutes, or until golden brown.
- 6. Prepare the Topping: In a small bowl, whisk together the icing sugar, maple syrup, and heavy cream until smooth.
- 7. Frost and Enjoy!: Once the rolls are done baking, let them cool for about 10 minutes. Drizzle the maple icing over the warm rolls. Sprinkle with flaky salt for a final touch and enjoy!
