Miso Glazed Salmon with Roasted Brussels Sprouts

Ingredients and Method
Ingredients
- 2 salmon fillets (about 6 oz each)
- 2 tbsp miso paste (white or red)
- 1 tbsp soy sauce
- 1 tbsp mirin (or rice vinegar as a substitute)
- 1 tbsp honey
- 1 tsp sesame oil (optional)
- Salt and pepper, to tast
- 2 cups Brussels sprouts, trimmed and halved
- 1 tbsp olive oil
Method
- Prepare the Miso Glaze: In a small bowl, mix together miso paste, soy sauce, mirin, honey, and sesame oil. Stir until smooth.
- Marinate the Salmon: Place the salmon fillets in a shallow dish and coat them with the miso glaze. Let the salmon marinate for 15-30 minutes in the fridge for deeper flavour.
- Prepare the Brussels Sprouts: Toss the halved Brussels sprouts with olive oil, salt, and pepper.
- Roast the Salmon and Brussels Sprouts: Roast everything in the air fryer for 12-15 minutes at 375°F, or until the salmon flakes easily with a fork and the Brussels sprouts are crispy and golden brown.
- Serve & Enjoy: Plate the miso-glazed salmon with roasted Brussels sprouts on the side.
