Ingredients and Method
Ingredients
- 250 g (8–9 oz) fresh wheat noodles or egg noodles
- 1 tbsp neutral oil (grapeseed or avocado)
- 1 tsp sesame oil
- 2 cloves garlic, thinly sliced
- 1 tsp fresh ginger, finely grated
- 1 carrot, julienned
- 1 red bell pepper, thinly sliced
- 150 g (5 oz) mushrooms (shiitake or cremini), sliced
- 2 green onions, cut into 2-inch pieces
- 2 tbsp soy sauce (or tamari)
- 1 tbsp oyster sauce
- 1 tsp honey or brown sugar
- 2–3 tbsp water or vegetable broth
- Optional protein: shrimp, tofu, or chicken strips
- Garnish: sesame seeds, extra green onions
Method
- Cook the noodles Boil noodles according to package instructions until just tender. Drain and set aside.
- Build flavor in the frypan Heat the 10.5” Stone Shield covered frypan over medium heat. Add neutral oil and sesame oil. Sauté garlic and ginger for 30 seconds until fragrant.
- Add vegetables (and protein if using) Add carrots, bell pepper, and mushrooms. Cover with the lid and cook for 3–4 minutes, letting the vegetables soften gently.
- Create the sauce Stir in soy sauce, oyster sauce, honey, and water/broth. Mix well.
- Toss the noodles Add noodles directly into the frypan. Use tongs to gently lift and toss (don’t cut or break the noodles, symbolic for longevity). Cook uncovered for 1–2 minutes until evenly coated and glossy.
- Finish & serve Add green onions, toss once more, and remove from heat. Garnish with sesame seeds and extra scallions.
