Ingredients and Method
Ingredients
- 400 g courgettes
- 1 tbsp chopped fresh mint
- 2 tbsp chopped fresh dill
- 2 tbsp chopped fresh parsley
- 2 tbsp chopped fresh chives
- 1 chopped spring onion
- 1 chopped garlic clove
- 2 beaten eggs
- 1 tbsp olive oil
- 150 g flour
- Salt and pepper
- Oil spray for the grid
Method
- Wash and grate the courgettes without peeling them. Lightly salt the courgettes and place them in a colander. Squeeze them with your hands to remove as much water as possible.
- Put all the ingredients and the courgettes in a bowl. Season and mix well to obtain a homogenous dough.
- You can put around 6 fritters in your pan, spacing them well apart. Use a tablespoon to form small patties of dough and carefully place them in the Easy Fry fitted with the Regular Grid previously oiled. Start the AIR FRY programme at 180 C for 12 mins. You can flip the fritters over halfway through cooking, though it's not strictly necessary.
- Use a smooth spatula to flip the fritters over. Repeat the operation until all the dough is used up.
- Serve piping hot with a sauce of your choice.
- TIP: Serve your courgette fritters with a yoghurt sauce. Zero waste tip: you can use old courgettes and slightly wilted herbs to make this recipe. It's very important to drain the courgettes well to make this recipe a success!
