Adobo-Rubbed Chicken Thighs with Charred Broccoli with Chili Oil

Ingredients and Method
Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 tbsp adobo seasoning
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tbsp olive oil
- Salt and pepper, to taste
- 2 cups broccoli florets
- 1 tsp chili flakes (adjust to taste)
- 2 garlic cloves, minced
Method
- In a small bowl, mix adobo seasoning, smoked paprika, and garlic powder.
- Rub the chicken thighs with olive oil, then coat them with the seasoning mix. Season with salt and pepper to taste.
- Roast the Chicken Thighs for 22 minutes at 375°F
- In a bowl, toss the broccoli florets with olive oil, chili flakes, minced garlic, salt, and pepper.
- Roast the broccoli for 10-12 minutes at 375°F, until the broccoli is charred and crispy on the edges.
- Once the chicken is cooked and the broccoli is crispy, plate the chicken thighs alongside the charred broccoli.
