Adobo-Rubbed Chicken Thighs with Charred Broccoli with Chili Oil

Ingredients and Method

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 tbsp adobo seasoning
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 2 cups broccoli florets
  • 1 tsp chili flakes (adjust to taste)
  • 2 garlic cloves, minced

Method

  1. In a small bowl, mix adobo seasoning, smoked paprika, and garlic powder.
  2. Rub the chicken thighs with olive oil, then coat them with the seasoning mix. Season with salt and pepper to taste.
  3. Roast the Chicken Thighs for 22 minutes at 375°F
  4. In a bowl, toss the broccoli florets with olive oil, chili flakes, minced garlic, salt, and pepper.
  5. Roast the broccoli for 10-12 minutes at 375°F, until the broccoli is charred and crispy on the edges.
  6. Once the chicken is cooked and the broccoli is crispy, plate the chicken thighs alongside the charred broccoli.
  7. Enjoy your flavourful, smoky adobo chicken and spicy broccoli!
