Ingredients

  • 1 tbsp vegetable oil
  • 1 cup onion, diced
  • 1 ½ tsp garlic, minced
  • ½ tsp cumin, ground
  • ½ tsp chili powder
  • 1 ½ tsp turmeric, ground
  • ½ tsp cinnamon, ground
  • 2 tsp garam masala
  • 2 tsp salt
  • ½ tsp pepper, ground
  • ¾ cup carrot, diced
  • ⅓ cup peas, frozen
  • 1 cup tomato, diced
  • ½ cup green beans
  • ½ cup cauliflower, chopped
  • ½ cup green lentils
  • 1 ½ cup basmati rice
  • 4 cup vegetable stock
  • ½ cup water
  • ¼ cup cilantro
  • 3 tbsp mint

Preparation

1. Select browning program no. 12, at 160C, with time set to 15 minutes. 2. Let the bowl heat up for 1 minute. Then, add oil to the bowl and wait another minute for the oil to heat up. 3. Once hot, add in diced onion; then stir, and cook for 3 minutes. Add minced garlic, and all of the spices. Stir and cook until fragrant, about 20 seconds. 4. Add in diced carrot, tomato, green beans, and cauliflower; then stir and cook until timer ends. 5. Once cooking program is complete add in the frozen peas, rice, lentils, stock and water. Stir and close lid. 6. Select brown rice + green lentils program no. 8, automatic cooking time (for 6 servings). Then select start. 7. Once cooking program has finished, stir in fresh chopped cilantro. 8. Serve hot with fresh chopped mint on top. Yogurt rita makes great topping as well.
