1. Insert the STIRRING paddle. Select the FRY/CRUST function with food type as VEGETABLE. Add into the machine olive oil, onion and garlic. Set time for 8 minutes and select the STIR function. 2. Once the cooking program has ended; add the crushed tomatoes, oregano, sugar and salt and pepper to taste. 3. Select the SOUP function with food type as VEGETABLE. Set time for 20 minutes and select the STIR function. Close the lid and select the START key. 4. While the sauce is cooking, combine the ricotta, roasted red pepper, spinach, basil, pine nuts, olive oil, lemon zest, salt and pepper into a bowl. Mix well until incorporated. 5. With a piping bag or freezer bag with the the corner cut off; begin to fill your pasta. Squeeze filling into each end of the cannelloni until completely full. 6. Once the sauce has finished, open the lid and remove the paddle. Pour ⅔ of the tomato sauce into a separate mixing bowl; ensuring the bottom of the Multicooker bowl still has some sauce remaining. 7. Place 6 stuffed cannelloni into the machine, then top with another 3rd of the tomato sauce. 8. Place the remaining 6 cannelloni ontop followed by the rest of the sauce, ensuring all of the pasta is covered. 9. Select the BAKE function with food type as VEGETABLE. Set the time for 20 minutes. Deselect the STIR function. Close the lid and select the START key. 10. When the cooking program has finished, serve with optional, grated parmesan, fresh basil or red chili flakes.
