Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 cups rice
  • 75g frozen wild caught scallops, cut in 4
  • 75g frozen clams
  • 200g or 8 frozen jumbo shrimps, peeled and cleaned
  • 75g of frozen lobster meat, chopped
  • 60ml white wine
  • 4 cups fish stock
  • Salt and pepper
  • Fresh oregano garnish

Preparation

1. Insert the Stirring paddle. Select the SAUTE function with food type as Vegetables. Set the time to 10 minutes and select the Stir function. Add oil, garlic and onions then close the lid and select the Start key. 2. Once the timer has finished, open the lid and add the rice and white wine. Leave the lid open for 1-2 minutes until the wine has evaporated. Add the fish stock, seafood, salt and pepper. 3. Close the lid and select the Risotto function, then select the Stir function followed by the Start key. 4. Once the cooking program is finished, taste and adjust seasoning.Serve hot
