Ingredients

  • 1 tbsp oil
  • 1 c onion
  • 1 ½ tbsp garlic, chopped
  • ½ c green pepper, diced
  • 1 ½ tbsp jalapeño, minced
  • 1 lbs ground beef
  • 3 tbsp chili powder
  • 1 tsp cumin
  • 2 tsp salt
  • ½ tsp black pepper, ground
  • 1 can fire-roasted diced tomato (796 ml/28 fl oz)
  • 1 can black eyed-peas, with liquid (540 ml/19 fl oz)
  • 1 can red kidney bean, drained
  • 1 c frozen corn
  • 1 tsp oregano, fresh
  • Sour cream, garnish
  • Green onion, sliced garnish
  • Jalapeno slices, garnish
  • Cilantro, garnish
  • Lime wedge

Preparation

1. Insert stirring paddle. Select the SAUTE function with the food type set as Vegetable. Set time to 10 minutes. Add the oil, onion, garlic, jalapeno and ground beef. Close lid and select the START key. 2. Once the cooking program has finished, add in the cumin, chili powder, salt, peper, diced tomatoes and beans. 3. Select the SOUP function with the food style as VEGETABLE. Set time to 30 minutes and select the START key. Keep the lid open. 4. Once chili has finished cooking, stir in corn and fresh oregano. 5. Serve hot. Garnish with a dollop of sour cream and sliced green onions.
