1. Select SAUTE function with food type as CHICKEN. Select STIR off. 2. Set time to 15 minutes, then add 1 tbsp of oil. Close the lid and select the START key. 3. Meanwhile, season each chicken thigh with minced garlic and a pinch of salt and pepper. 4. After 5 minutes, open the lid and add the chicken thighs skin side down. Close the lid and let cook for 5 minutes. Using tongs, flip the chicken and let cook for the remaining 5 mins. 5. Once cooking program has finished, remove the chicken thighs and set aside to rest. 6. Insert paddle attachment; leaving any remaining oil in the bowl. Select the SAUTE function with food type as VEGETABLE. Set time to 8 minutes, then select the STIR key. 7. Add potatoes, carrots, onions, thyme and cumin. Close the lid and select the START key. 8. Once cooking program has ended, open the lid and add the beer, mustard, chicken stock and the partially cooked chicken thighs. 9. Close the lid then select STEW/SLOW COOK function with food type for CHICKEN. Set the time to 35 minutes, then select the STIR key. 10. Once the cooking program has ended, open the lid and add in the butter and flour slurry. 11. Select STEW/SLOW COOK with food type as CHICKEN. Set the time to 30 minutes, then select the STIR key. 12. With 4 minutes remaining, open lid and add frozen peas, and grated parmesan. 13. Once cooking program has ended adjust seasoning. Serve hot with a garnish of freshly grated parmesan.
